I’m always looking for recipes that are quick, easy, healthy, and make enough for leftovers! This stew fits all the requirements and there’s a ton leftover to munch on during the week. I’m not a very good recipe follower, as I usually feel like I need to alter stuff either to my liking or to fit what I actually have in the fridge! I loosely followed a recipe from Paula Deen on this one…
- Salt and ground pepper
- 3 pounds meat, cut into 1 1/2-inch cubes (beef, lamb or other)
- 6 celery stalks, chopped
- 2 large leeks, chopped
- 2 large yellow onions, chopped
- 2 cups finely chopped cabbage
- 1/2 teaspoon ground coriander
- 1/2 teaspoon ground thyme
- One 8-ounce can diced tomatoes, with juice
- 2 cups canned beef broth
Brown the meat in a large pot and season it with garlic salt and pepper. Add the chopped vegetables and stir together. Add the other seasonings and liquids, taste it, add any more seasonings, cover it and let that baby cook for a couple of hours! The meat will be falling apart tender when it’s all said and done!
