Hi…it’s me….shhhhhh….I have a secret for you! Ready?!?!? Here goes: crockpot!!!! Yup, if you haven’t explored the wondorousness that is the crockpot, then go hop on Amazon Prime and order yourself one, pronto! Imagine this: you buy a big slab of cheap meat, throw it in there with some other stuff and leave the house. You walk in 8 hours later and the house smells amazing and dinner is READY!!!
Green Chile Pork:
So, we’ve established that crockpot cooking is easy, but I have the seriously most easy and delicious crockpot recipe for you EVER! Go to the store and grab yourself a pork butt, pork loin, or whatever pork roast is on sale. Now, go get a large can of green enchilada sauce and now…wait for it…go home! Throw the pork in the crockpot, pour the sauce over it, and forgettaboutit! Crank it on high for 5ish hours, or until it falls apart when you stab it with a fork. Let it cool down a bit, then throw it into a large bowl and shred it with your stabbing fork. Spoon some of the cooking sauce over it until it’s all juicy. Taste it. Good? Probably needs some garlic salt and possibly a little splash of cumin or chili powder. Taste it again? Really good? Cool, you’re done!
Use a bag of frozen chicken breasts instead of the pork. Cook for 3ish hours instead.
Use a beef roast with red enchilada sauce instead. Cook for 6-7 hours, depending on the size of the cut.
Use your favorite salsa instead of enchilada sauce. Just make sure you have enough to cover the meat.
Pork Soft Tacos – Throw some pork in a flour tortilla and top with shredded cheese, salsa, avocado, green onions and cilantro. Hint: Serve it with some of the cauliflower rice from over here.
Pork Enchiladas – Roll the pork up in tortillas with cheese. Add saved sauce over the top and bake until bubbly. Hint: Serve it with some mashed black beans from over here.
Green Chile Pulled Pork Sandwiches – Put the pork on soft buns, top with coleslaw, and hot sauce and dig in!
