Stuffed Sweet Potatoes – Paleo Style

Turns out sweet potatoes are the perfect vehicle for stuffing. Maybe you knew that...maybe you didn't, but I'm here to tell you that it's a fact! I've seen lots of recipes and heard some of the hubbub, but haven't actually tried the phenomenon myself. Until now. I'm pretty sure … [Read more...]

Living With the Darkness of Depression

This is a story about depression. My story about depression. Funny thing is, I don't suffer from depression, my husband does. This is my story about living with, loving, and surviving with a person who has depression. Let me start the story off by telling you about Matt, my … [Read more...]

Pan Roasted Purple Carrots

Carrots? Sure, I like carrots...but I don't LIKE carrots, if you know what I mean. I grew up eating carrots that had been boiled until tender and then buttered and seasoned. Not that there's anything wrong with that, but they didn't exactly make me want to run back for seconds. … [Read more...]

My Fight with the Mandolin

My Fight with the Mandolin

I recently had an altercation with a Mandolin. And I don't mean the instrument...I mean the slicing, cutting machine that makes your life easier (if used properly) or a bloody hell (if used improperly). While making these Sweet Potato Chips, I got a little over-excited and cut … [Read more...]

Sweet Potato Chips – Easy Paleo Style

Sweet Potato Chips – Easy Paleo Style

I love chips. Whether they're tortilla chips, potato chips, fried, baked, or otherwise...I love them. Well, they're not exactly part of a 'healthy' diet, and definitely not part of a Paleo diet, so I've been incorporating other chip varieties, if you will. My current favorite is … [Read more...]

A Letter to My Son – 2 Years Old!

To my boy, Sammy, You turned 2 years old the other day. Wow, maybe seems like no big deal...but it's a pretty big deal to us! You're walking, talking (kind of your own version of English, but it's a good start), laughing, dancing, playing instruments, and entertaining us more … [Read more...]

Paleo Style – Sausage Egg ‘Muffins’

I've seen recipes and pics all over the place about these little gems and have been excited to give them a shot! And guess what? They were even easier and quicker than I thought they would be. Little hand-held bites of protein goodness that you can grab and go or serve up at your … [Read more...]

Chile Relleno Casserole – Paleo Style

I happen to love Mexican food, in fact, I often crave it! There's nothing better than spicy, cheesy, gooey, delicious concoctions. Unfortunately, there's not a lot of traditional Mexican food that falls into the Paleo category so I'm making it my mission to provide us addicts … [Read more...]

About Me

I’m a 40-something year old new mom who happens to be somewhat addicted to working out and imperfectly “eating healthy”. This is my safe place to share my journey…and give you a little insight into what goes on inside this mostly-sane brain.

Not enough scoop on me? Well, I love the ocean, sushi, chocolate cake and wine (not necessarily in that order or all together). I partake in the occasional cigar with my handsome, loving, and opinionated husband. We had a pretty awesome baby boy named Samuel Liberty, aka Sammy on October 12, 2012 and are enjoying the crazy, challenging, incredible journey of life with a new little being in our house!
