We recently partook in a Merlot and food pairing with some good friends. We brainstormed and schemed about what foods and flavors would pair well with Merlot and hence, this Savory Dark Cherry Sauce came to life. I wanted something that had that deep cherry flavor, but wasn’t too sweet. This pretty much did the trick. I made lamb meatballs for dipping and it all worked out great! I think you could pair this sauce with just about any meat, grilled or roasted, as well as some cheeses and charcuterie. Try it out and let me know what you paired it with!
1 large shallot, chopped
2T fresh rosemary, chopped
2T fresh thyme, chopped
2 T olive oil
½ c balsamic vinegar
½ c red wine
1 ½ c frozen cherries
Garlic salt to taste
Fresh ground black pepper to taste
Saute the shallot and herbs in the olive oil over low heat. When the shallot starts to brown, add the vinegar, wine, and cherries. Simmer and reduce, about 20 minutes. Season with the salt and pepper to taste.

Oh my, this sounds absolutely yummy! I’m printing out your recipe to try it with all kinds of things. Was thinking of chicken – and will probably try it – tho’ the richness of the sauce itself might overpower the little winged bird. Will experiment and let you know! Xoxo
