Here, in Paso Robles it gets HOT in the Summer. We get many days over 100 degrees, and what’s better on a spicy hot day? Popsicles!!! Yup! But these popsicles have a twist…they’re actually GOOD for you! I make these for my 7-year old son and he loves them! Can’t get enough of them. He asks for one as a dessert after a meal and I’m happy to let him have it. They’re not only for kids, so you grown ups can get in on the fun, too.
The beauty of these pops is that you can put all kinds of good stuff in them and not even know they’re good for you when you eat them. I’ve done fruit and yogurt, just yogurt, just fruit, etc. You get the idea. I ordered a popsicle making kit on amazon that looks like this and never looked back!
This batch had the following in it:
– Frozen blueberries
– Frozen broccoli sprouts (if you haven’t read about these magical gems, click on the link!)
– Almond butter
– Honey
– ½ avocado
– Cinnamon
– Almond milk
– Water
Per my usual, I don’t measure most of the time, I go by looks and taste (and whatever I have on hand) so get creative! Try different fruits and spices. Throw in protein powder, healthy fats, kale, sweet potato, whatever you have hanging around that sounds good. Give it all a whirl in the blender and taste it. Add whatever it needs to make it fabulous and you’re done. Fill the popsicles and freeze. You and your kids will thank me!
