Cooking with Annie: Meatloaf and The Sides

I was never a big meatloaf fan until Annie made it for me. She makes awesome meatloaf. Recently she did it again. Here’s the recipe she did this time along with the sides:

Meatloaf: Sauteed onion, garlic, celery and carrots within a blend of turkey burger and ground beef, topped with spicy BBQ sauce and bacon bits.

Mashed Sweet Potatoes: Smashed with melted butter, heavy cream and garlic salt.

Roasted Broccoli: Tossed with olive oil, garlic salt and herbs, roasted in the oven.

Cauliflower Rice: Sauteed with onions and chunky tomato salsa.

Green Salad: Broccoli, kale, brussels sprouts, cabbage, radicchio, cilantro, green onions, dried cranberries and roasted pumpkin seeds.

It was all amazing but the meatloaf and the cauliflower rice was my favorite. We opened a 2014 Grenache Rose from J. Lohr Winery and a 2013 Pinot Noir from Baker & Brain.

Nothing quite like good food, good wine, and good friends. Cheers!
