San Antonio Winery<\/a><\/strong> was established in 1917, is proud to announce its continuing commitment to the world-class Paso Robles wine region with the grand opening of its new state of the art production facility committed to environmental stewardship. The winery is designed for crafting premium wines using sustainable techniques that conserve energy and water, and reduce waste.<\/p>\nLocated in Paso Robles, the Riboli Family Wines Estates winery will serve as the production home for all brands under the family\u2019s portfolio including San Antonio Winery<\/strong>, Maddalena<\/strong>, Opaque<\/strong>, San Simeon<\/strong>, and others.<\/p>\n\u201cWe are tremendously proud of our Los Angles roots,\u201d says fourth-generation family Winemaker, Anthony Riboli. \u201cAnd we are equally proud of growing our presence in Paso Robles. This modern and energy-efficient winery will allow us to continue to produce high-quality, award-winning wines with every vintage.\u201d<\/p>\n
Designed and constructed by local firms Reiss Design Studio, and J.W. Design & Construction, respectively, the modern facility features energy-efficient LED lighting, both closed-top and open-top tanks, and a cellar that boasts four separate barrel spaces to allow the winemakers to ferment and store barrels at ideal temperatures, depending on the vintage and varietals.<\/p>\n
The cellar also has temperature controls, to ensure the cooling system isn\u2019t running during Paso Robles\u2019 famously frigid overnight temperatures, saving on energy demands. Thermostats monitor the outside temperature and when it drops to the ideal level, the system automatically turns on multiple fans which pull the cool air in and through the winery. The entire winery is air-cooled to save water and all process wastewater and storm water is reclaimed for irrigation purposes onsite through a sustainable state of the art membrane bioreactor.<\/p>\n
\u201cThis has allowed Riboli Family Wine Estates to become a zero waste discharger, meaning under normal circumstances zero wastewater goes to the city sewer,\u201d said Troy Ellison with Cloacina LLC, the company that manufactured the bioreactor.<\/p>\n
On the Riboli Family winemaking team, Winemaker Ben Mayo, a native of San Luis Obispo County with 15 years of experience making wine in Paso Robles, says what drew him to Riboli Family Wine Estates is the family\u2019s vision and passion for the Central Coast and the opportunity to lead boutique vineyard-driven brands that showcase the very best vineyards in Paso Robles and Monterey. With regard to being able to produce these wines in the new modern and sustainable winery, Mayo stated he feels like a \u201ckid in a candy store.\u201d<\/p>\n
