These may be the only two perfect things in the world. They both pair well with everything and, when done correctly, are absolutely delicious. I will let Annie cover how and what she did regarding the taco meat and all that. As for the Ros\u00e9 wines that were brought over, you can see photos in the slideshow below. There were a few more brought but we didn\u2019t get around to opening them. You\u2019ll also see a white wine or two that were opened up.<\/p>\n

Now\u2026to the tacos.<\/p>\n

I kind of cheated and went to our favorite local Mexican Meat Counter, La Reyna to get the meats. They do an excellent job of seasoning and preparing the meat and it’s very reasonably priced. This is definitely going to be a repeat cheat!<\/p>\n

We had so many delicious “decorations” for our tacos. Assorted salsas, guacamole, pickled vegetables, jalapenos, onions, cilantro, charred pineapple, cheeses, cabbage, hot sauces, etc. Phewwww. We also had warm corn and flour street taco-sized tortillas.<\/p>\n

All these amazing toppings went in various combinations over Al Pastor, Chicken, and Carne Asada. I put all the meat on the Traeger for a low smoke for about an hour. Then pulled it off and seared it in a hot pan on the stove. Everything was amazing, and luckily, we have leftovers!<\/p>\n\n\n
