The Hatch Rotisserie & Bar Opens in the Heart of Paso Robles Wine Country

Downtown Paso Robles gains new eatery dedicated to simple, wood-fired food and classic cocktails

Paso Robles, Calif., – Nestled smack-dab in the heart of downtown Paso Robles is The Hatch Rotisserie & Bar. A creation and long-time dream of Maggie Cameron and Eric Connolly, this new neighborhood eatery is designed as a gathering place for friends, old and new, to enjoy simple foods, classic and craft cocktails and beautiful wines. Located at 835 13th Street in Paso Robles wine country, the duo has hired Chef Mateo Rogers to oversee the kitchen, which includes their dynamic wood-fired rotisserie.

Crafted without waste, the food served at The Hatch Rotisserie & Bar has been inspired by both respect for where food derives along with family traditions taught to both Maggie and Eric as children. This thoughtful approach can ensure guests that each bite savored has been prepared with care and enjoyment in mind.

“Nothing brings people together like a home-cooked meal, and we want to share with our guests the respect we have for food traditions and for the people who grow and produce the food we eat,” notes Maggie Cameron, co-owner of The Hatch Rotisserie & Bar. “Opening the restaurant has been a dream come true for both Eric and myself, and we could not be more thrilled to be doing so in this historic old building in the middle of our Paso Robles community.”

Boasting an open kitchen, diners will gaze at Chef Mateo Rogers as he watches over the restaurant’s woodburning rotisserie swirling with the likes of chicken, ribeye or lamb. Not only will the protein on the spit change daily, The Hatch Rotisserie & Bar will offer their organic rotisserie chicken and delicious sides for take-away, giving patrons the excuse to come back day after day.

Those dining in will simply devour the plates created by Chef Mateo Rogers. Each dish has been thoughtfully prepared with ingredients sourced from talented producers that Maggie, Eric and Mateo are fiercely loyal to due to their quality, consistency and growing practices.

Cocktail Hour is a way of life at The Hatch Rotisserie & Bar! Each classic or craft cocktail and every wine or local beer poured has been as thoughtfully created and sourced as the ingredients on their menu.     Food is absolutely outstanding- chef Mateo and the team is nailing it!! The menu reads nothing like any other menu in downtown so it’s a welcome addition for its unique take on comfort classics! This is simple, fresh and tasty comfort food at its best. Maggie and Eric are always on hand- it really feels like they are hosting a great dinner party in their home! The cocktails are fantastic too! The chicken and prime rib are a MUST try, along with fried green tomotoes and grits. the butter beans and cauliflower sides were so awesome…..and the heavenly chocolate puddin’ for dessert. I am glad we came with a lot of people so we could eat family style and we could all try everything.

    We were very fortunate to be invited to the soft opening on Friday, June 12th and although the full menu was not available that night we had more than enough to eat! With Seth and Whitney behind the bar, you must try the craft cocktails such as the Swallowtail, the Hemingway or the Hatch-a-Plan…all perfectly made! For appetizers, we tried the Padrons, Hatch Puppies and the Fried Green Tomato…Chef Mateo is spot on with these!!! For entrees, we sampled the Hatch Half Chicken, the Bone-in Ribeye and the Shrimp and Grits. Again, Chef and his crew were over the top with all three! Like Samantha said above, it feels like Maggie and Eric are hosting a dinner party at their place and all of your friends are there. With The Hatch, Fish Gaucho and THO, folks now have great choices to eat at other than on the park! Do yourself a favor and get in as fast as you can!!!

      For a town of 32,000 people the food and wine scene is unreal. Also a great growing craft beer scene and a thriving local musician spot.
