Bulk Cooking: Burritos

We’ve talked about bulk cooking in the past, and are here talking about it again. We all know we’ve had those times in our lives when the thought of cooking seems like too much effort. Why not make it easy and have things ready to grab in your freezer? This recipe is quick, easy, super tasty and gives you approximately 40 burritos at the ready.

3 lbs. ground beef or turkey
1 can red or green enchilada sauce
6 cans pinto or black beans
2 lbs. grated cheese
40-45 8” flour tortillas
In a large pan, brown the meat. Drain off any excess fat and season with garlic salt, oregano, and pepper.
Add the enchilada sauce and beans to the meat. Stir well. Mix in the cheese. Taste and correct any seasonings. Set aside.
Heat half of the tortillas over a gas stove burner on each side until lightly toasted. Store in a tortilla warmer.
Set up your workstation for assembly. I use a large cutting board, pull two tortillas out, put a scoop of the meat mixture on each and then roll up. The finished burritos then go on a cookie sheet covered w parchment paper. Once all of the burritos are rolled, put the sheets in the freezer. When the burritos are frozen, store in Ziploc bags in the freezer for easy access later.
When ready, heat the burrito in the microwave until warmed through. Enjoy!
