Okay, you guys…this salsa is GOOOOD!!! Not that I’m patting myself on the back, but I think I may have killed it this time! I’ve been making salsa for a long time, and have made some really good stuff, and some not-so-great stuff, but I’m chalking this up as one of the absolute best!
I did everything on our Traeger, but you can use a regular grill, or anything that has a bit of smoke and/or char. You could even do it in the oven, it just won’t have the smoky taste, but still super tasty.

What you need:
10-15 large tomatoes, cut into quarters
8-10 jalapenos, cut in half lengthwise, seeds removed
1 whole onion, cut in quarters or eighths
1 whole head garlic, top cut off
1/2 – 1 whole bunch cilantro (depending on how much you like cilantro)
1-2 T cumin (to taste)
2-4 T garlic salt (to taste)
Cover a large cookie sheet with foil. Put tomatoes, jalapenos, onion and garlic on it (or two if you need more space). You may or may not want to drizzle a little bit of olive oil on the head of garlic to keep it a bit moist. See what I did there? I said “moist”.
Put the pan on the Traeger at 180 for an hour. Increase the heat to 350 for about a half hour to hour, until all ingredients are wilted and slightly charred on the edges.
Remove and set aside.
Set up a blender. Put all tomatoes, onion and garlic in the blender. Blend. Add the spices and ½ of the jalapenos. Taste. If you like more spice, add more jalapenos. When you get the spice you like (I like it pretty spicy, and added all the jalapenos) add the cilantro and finish with a final blend.
Serve with fresh tortilla chips, and top on all your meats, tacos, salads, close friends, etc.
