We’re eating what I call “Paleo Style” these days. It’s entirely based on the Paleo diet, but with a few small modifications here and there. I completely agree with getting rid of refined sugars, processed foods, and simple carbs, I still need my wine!!! Yeah, less wine, but Mama needs her medicine sometimes. Logic, moderation, and REAL food are my main ingredients!
So, I’ve been trying to come up with meat and veg combos that have the texture combination of that carb effect. I’ve done all kinds of things with cauliflower; mashed, “rice”, and even tortillas, but this time I tried cabbage as the “carb”. Turns out it can act a lot like noodles! So, here’s what I did to make Almond Chicken with Cabbage Noodles:
1/2 head of green cabbage, sliced cross-wise
2 chicken breasts, cut into bite-sized chunks
6 green onions, sliced coarsely
A couple of handfuls of raw almonds, chopped coarsely
Soy Sauce, Garlic Salt, and some Black Pepper to taste
I sauteed the chicken in a hot pan with Olive Oil, seasoned it with a little of the Soy Sauce and when it was pretty well cooked, I added the green onion and cabbage. After the veggies were in, I re-seasoned to taste. Then, saute until the “noodles” are still a little bit firm, and voila! Top it with the chopped almonds and enjoy! You could add more veggies, depending on what you have, and what you like; broccoli, peppers, celery, etc.
And by the way, it pairs nicely with a glass of chilled Viognier if you’re feeling rebellious, like I was!
