I’m gonna go ahead and start out by saying that these are GOOD! Not to pat myself on the back, but I kinda outdid myself with these little buggers. And the reason that I call them “sneaker” is because they’re packed with good, healthy stuff but pack some seriously delicious flavor. This batch makes about 30 smallish pancakes, and if that’s too many for one sitting, you can freeze them and pull out however many you need later to reheat. I give my kid 3 or 4 of these for breakfast along with some strawberries and he’s a pretty happy dude.
Okay, here’s what you’ll need:
– 2 overripe bananas
– 1 apple, cut into large chunks
– 2 carrots, grated
– 3/4 cup rolled oats
– 4 eggs
– 1/2 cup almond milk
– 1 Tablespoon baking powder
– 1/4 cup baking cocoa
– 1 teaspoon salt
– 1 teaspoon cinnamon, allspice, or pumpkin pie spice
Here’s what you do…put everything into the blender and whip it up! You may need to add a little more milk or a little more of the oats, depending on consistency when it all comes together.
Over medium heat, in a lightly greased skillet, pour the batter into medium cakes and turn when little bubbles come up. Serve immediately with fresh berries, syrup, or powdered sugar. Enjoy!
